Food - The Ultimate Comfort

The weather is getting warmer and school is almost out. Summer is just around the corner and that means picnics, camping, neighborhood BBQs, and lots of amazing and wonderful summer food.

Along with fresh fruits in season, many food lovers turn to their favorite comfort foods throughout the summer months. Comfort food makes everything better! So what are some of the classic summer comfort foods that come to mind when it’s warm outside?

Even when the weather is hot, foodies still love a good soup. Corn chowder cooked in the crockpot or creamy tomato (with a side of grilled cheese), soup equals comfort. No fireplace or winter coat required. And if you want a cold option – gazpacho is the ultimate refresher.  As the ad used to say, soup is good food.

What’s a convenient and tasty way to get your summer vegetables in? How about whipping up a quiche? You can throw in some spinach, onions, carrots, and zucchini, and with all of those veggies, you won’t feel bad about the extra cheese! A quiche is also a great picnic option, popular with everyone, filling, and easy to serve and eat.

Pasta Salad

Few would argue that pasta is the ultimate comfort food. And in the summer time, you can put together a cold and refreshing pasta salad tossed in a light vinaigrette. Cherry tomatoes for a pop of color, balls of fresh mozzarella for smooth deliciousness, and some cucumbers for crunch. That is the ultimate comfort.

Blueberry Cobbler

No comfort food list is complete without a sweet option.  And if you want to be healthy(ish) - how about having the star of your dessert be fruit?  Blueberry cobbler is a classic.  With a granola crust and served with a scoop of vanilla ice cream, you've got the perfect summer comfort dessert.

It's hard not to get excited about the summer months to come.  Sunshine and get togethers, trips and adventures, the summer is just full of joy and renewal.  So why not allow yourself a little indulgence as well?  Summer comfort foods are on the menu, please do help yourself!
